Production of white wine

The unique white wine from Château Escot is dedicated to the careful and prudent hand harvesting of the grapes. The maturation of the different varieties on the great terroir offers first the harvest of Sauvignon Blanc, followed by Sauvignon Gris and, with some distance, Sémillon.

For this reason, the grapes are pressed in three stages on a special press used for white varieties. This is a hermetically sealed press. Its space is filled with nitrogen to protect the delicate must from oxidation and to prevent its aromatic richness from being compromised.

The pressed must is de-stemmed from the coarsest lees and part of it is placed in a stainless steel vat in which alcoholic fermentation takes place at a temperature of 16° C.

The other part of the must is put into new 225 litre oak wooden barrels (Barrique) for alcoholic fermentation and training on fine lees. In the Barrique, the trained wine is agitated at precise intervals so that the substances released from the yeasts after dislocation give the wine a silky sensory expression. The same procedure is followed for the must aged after alcoholic fermentation in a stainless steel vat. In both cases, SO2 is added to the musts after alcoholic fermentation so that malolactic fermentation does not take place and the freshness of the wine’s aromatic expression is not lost.

In the final stage, the elegant wine is racked, filtered and bottled. The expression of the wine accurately captures the typical charming character of white Bordeaux by Château Escot blanc.
