A pleasant accompaniment to light charcuterie starters, grilled and roasted seafood, seafood pasta, grilled meat without sauce or roast chicken. It also goes well with young, delicate creamy cheeses.

This charming wine has a vibrant pink colour with a delicate, light salmon hue. On the nose, there are delicate notes of spring flowers and early yellow-red cherries, with light hints of ripe red berries, particularly raspberries and strawberries. On the palate, this wine is juicy and fresh, with notes of bright red fruit and a delicate fragrance of red rose blossom.

Production of rosé wine

The Merlot grapes ripen on a parcel of land with a mixture of sand and limestone. The favourable climatic conditions allow them to ripen early. The juice of this grape variety is fresh, rich in fruit expression and perfectly suited to the production of rosé wine, the method of which is specific to the Bordeaux region.

The grapes harvested for the Les Sorbiers Escot rosé are carefully pressed immediately after harvest. The resulting must contains only a small amount of colouring, which is characteristic of this wine. The colour is pale pink, delicate and vibrant.

In the second stage, the must is pumped into stainless steel vats, decanted and enriched with selected yeasts, which carry out the perfect conversion of sugars into alcohols and enrich the must with delicate secondary aromas.

The alcoholic fermentation takes place at temperatures between 16° and 18° C.

After the alcoholic fermentation is completed, 5g/hl SO2 is added to the must to prevent secondary, malolactic fermentation, which would significantly reduce the freshness of the wine. Immediately afterwards, the Les Sorbieres Escot rosé is bottled.

This is quite different to the way rosé wines are made from varieties born in vineyards on the shores of the Mediterranean, where the harvested grapes are first gently crushed and macerated. The leached dye from their skins gives the local wines their deep pink colour.
